Pasta Love

Ah, Pasta Love. The name says it all. One bowl, 5 ingredients, it doesn’t get much easier and delicious. An instant classic in your house.

Ingredients:

  • 1 lb. Spicy, Italian sausage (casings removed)

  • 1 lb. Pasta (I usually make with Rigatoni or Penne)

  • 1.5 cup of red wine I usually use a Chianti or Cab

  • 1.5 cups of your favorite marinara sauce

  • 1/2-3/4 cup of heavy whipping cream

Method:

Brown Italian sausage in a large skillet or frying pan on medium high heat. When brown, reduce heat to low and add red wine and start water boiling for pasta. Mix wine well with sausage and let simmer for 10 minutes or so. Add tomato sauce to sausage and wine, increase heat to medium. Optional to add some crushed red pepper if you like, I usually go another 10 minutes or so. Add pasta to boiling water, be sure to salt your water with Kosher salt. Let sauce simmer nicely and cook while pasta is cooking, roughly 10 minutes for al dente pasta. Strain pasta when finished. Immediately after, add whipping cream to sauce and mix well to avoid clumping. Reduce heat to low and sit for about 5 minutes, stir a few times. When ready, add pasta to sauce and combine thoroughly.
